Ingredients

  • 1 cup granulated sugar or a sugar free alternative like monk fruit
  • 1 cup water filtered
  • 1 teaspoon peppermint extract or 1/4 teaspoon peppermint oil
  • mint leaves optional see notes

Instructions

    Cup of Yum
  1. Place water and sweetener in a medium size saucepan. Heat over medium heat and stir until the sweetener dissolves and the liquid is clear.
  2. Remove from heat and add fresh mint leaves if desired. Steep for a minimum of 20 minutes. Taste.
  3. Add peppermint extract or peppermint oil. Stir until well dispersed in the syrup. Cool.
  4. Pour into a c2lean jar.

Notes

  • For a sugar free peppermint syrup I have used monk fruit and Allulose. Monk fruit can be substituted for granulated sugar at a 1:1 ratio. If you use Allulose you will need about 1 1/3 cups to get the same sweetness as 1 cup of granulated sugar.
  • To use mint leaves, steep 1/2-1 cup of fresh clean leaves in the simple syrup (step 2) for a minimum of 20 minutes. The longer it steeps the stronger the flavor will get. Taste and add additional extract or oil if desired.
