Pepperoni Pizza Popcorn

Ingredients

  • ½ cup popcorn kernels
  • ⅓ cup clarified butter *see notes
  • 2 tablespoons grated Parmesan cheese
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ cup shredded Mozzarella cheese or to taste
  • ¼ cup Mini pepperoni

Instructions

  1. Preheat oven to 375°F.
  2. Pop popcorn in an air popper or using your preferred method. Spread on a large rimmed baking sheet.
  3. Mix the butter with parmesan, oregano, garlic powder. Drizzle over popcorn and toss to combine.
  4. Sprinkle popcorn with mozzarella and pepperoni. Bake 7-9 minutes or until cheese is melted.
  5. Serve warm.

Notes

  • To Clarify Butter Quickly in Microwave:
  • Cut butter into cubes and microwave in a large glass bowl/measuring cup (at least 4 cups) until completely melted and slightly foamy. About 1 minute for soft butter and 90 seconds for cold butter. (May vary, keep an eye on it, you want it to bubble a bit but not overflow).
  • Allow the melted butter to sit a few minutes until it separates.
  • Skim off the foamy top and scoop out the buttery oil (leaving any solids behind in the bowl, you want only the layer with the buttery oil).
