  • 3 tablespoons olive oil
  • 12 garlic finely minced
  • 3 pounds Shrimp peeled and deveined, 21/25 size
  • ½ cup white wine dry
  • lemon about 2 to 3 tablespoons, juice of 1

Instructions

    Cup of Yum
  1. Add the olive oil to a large pan or rondeau over low to medium heat and let it get hot for about a minute. Then add the garlic and cook while stirring it, just until you smell it, which takes about 30 to 60 seconds.
  2. Pour the shrimp, stir, and cook it for 60 to 90 seconds.
  3. Next, add the white wine and cook for 60 to 90 seconds.
  4. Finish by stirring in the lemon juice, parsley, butter, sea salt, crushed red pepper flakes, and pepper until combined.
  5. Serve with crusty bread or toss with cooked al dente pasta.

Notes

  • Enjoy this shrimp scampi immediately after cooking to keep shrimp tender and prevent them from becoming chewy.
  • Store leftovers covered in the refrigerator for up to 3 days or freeze for up to 3 months; thaw overnight before reheating gently in a pan.
  • Use the shrimp count to estimate portioning, aiming for 4-6 ounces per person.
  • To vary the flavor, add fresh herbs such as basil, oregano, chives, or thyme.
  • If you prefer not to use white wine, substitute with chicken stock for a similar depth of flavor.
  • Cook shrimp until they form a loose C-shape; a tight, firm curl indicates overcooking.
