Persimmon Salad with Balsamic Vinaigrette

Fresh green salad with persimmons, pomegranate arils, goat cheese and candied pecans over a homemade balsamic vinaigrette. Delicious side dish although you may enjoy this as the main.

Ingredients

SALAD
  • 5.5 ounce about 8 cups Mixed greens
  • 2 Fuyu persimmons sliced
  • 1/4 cup pomegranate arils
  • 2 ounceS goat cheese crumbled
  • [1/2 cup maple glazed pecan halves ]
BALSAMIC VINAIGRETTE
  • 3/4 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 1/2 teaspoons honey
  • 2 garlic cloves chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

BALSAMIC VINAIGRETTE
    Cup of Yum
  1. Place olive oil, balsamic vinegar, honey, garlic, salt and pepper in a jar with a screw top. Shake until well combined. Taste and adjust if needed.
SALAD
  1. Place greens in a large serving bowl.
  2. Add 1/4 cup of balsamic vinaigrette to salad and gently coat the greens.
  3. Top with persimmons, pomegranate arils, pecans, and goat cheese. Gently fold ingredients to distribute through the salad.
  4. Add additional dressing to suit your preference.
  5. Enjoy immediately.
