Ingredients

  • 1 ½ lbs ground beef 85% lean
  • 1 medium onion finely chopped
  • 1 bell pepper green or red, finely chopped
  • 2 cloves garlic minced
  • 1 cup Provolone cheese shredded
  • ½ cup breadcrumbs
  • 1 large egg
  • 2 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil for sautéing
  • 1 tablespoon fresh parsley chopped (optional for garnish)
For the topping:
  • ½ cup ketchup
  • 2 tablespoon mustard
  • 2 tablespoon brown sugar

Instructions

    Cup of Yum
  1. Preheat the oven to 375°F (190°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and garlic, and sauté for 5-7 minutes until softened. Remove from heat and allow to cool slightly.
  3. In a large mixing bowl, combine the ground beef, sautéed vegetables, provolone cheese, breadcrumbs, egg, Worcestershire sauce, salt, and pepper. Mix until everything is evenly incorporated.
  4. Transfer the mixture into the prepared loaf pan and shape it into a loaf.
  5. In a small bowl, mix the ketchup, mustard, and brown sugar. Spread the sauce evenly over the top of the meatloaf.
  6. Bake in the preheated oven for 55-60 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).
  7. Let the meatloaf rest for 10 minutes before slicing.
  8. Garnish with fresh parsley if desired and serve with mashed potatoes, roasted vegetables, or a side salad.

Notes

  • You can swap provolone cheese for cheddar or mozzarella for a different flavor profile.
  • For added texture, you can use panko breadcrumbs instead of regular breadcrumbs.
  • If you like extra cheese, add a layer of shredded cheese in the center of the meatloaf.
  • For a lighter version, use lean ground turkey or chicken instead of beef.
  • Leftovers can be stored in the refrigerator for up to 3 days and can be reheated in the microwave or oven.
  • For an extra Philly cheesesteak touch, top the meatloaf slices with sautéed mushrooms or peppers.
