Ingredients

  • 24 ounces baby dill pickles finely diced (about 10 baby dill pickles)
  • ½ sweet yellow onion finely diced
  • 1 red bell pepper seeded and finely diced
  • 2 tablespoons pickle brine from the jar
  • 1 garlic clove minced
  • ½ teaspoon kosher salt
  • 1 serrano pepper or jalapeno pepper finely diced

Instructions

  1. Stir together. To a mixing bowl, add the pickles, onion, bell pepper, pickle brine, garlic clove, and salt. Stir together until well combined.
  2. Marinate. Cover the mixing bowl and marinate for at least 2 hours in the fridge. Stir again before serving.

Notes

  • Although this recipe is more for American-type recipes, you can also use it as a topping for Mexican recipes such as carne asada tacos, carnitas tacos, or birria tacos!
