Pickled Mustard Seeds

Pickled Mustard Seeds are softened yellow mustard seeds repeatedly boiled and rinsed, then preserved in a mixture of white wine vinegar, honey, and salt. This pickling process yields seeds with a mellow, tangy flavor and a pleasing texture, suitable as a condiment to enhance dishes.

Ingredients

  • 8 oz white wine vinegar
  • 2 oz yellow mustard seeds
  • 3 tbsp honey
  • ½ tsp salt

Instructions

    Cup of Yum
  1. Put the mustard seeds into a pot with enough water to cover them.
  2. Bring to a boil. Remove from the heat and strain the mustard seeds through a mesh sieve.
  3. Return the mustard seeds to the pot and add fresh water. Bring to a boil, remove from heat and strain. Repeat this for another 6 times at least for a total of 8 times.
  4. The mustard seeds will expand and become softer.
  5. In a mason jar mix the salt, honey and vinegar. Feel free to warm the honey a little bit, this will help mix it with the vinegar. Add the strained mustard seeds, screw the lid on and store the Pickled Mustard Seeds in the refrigerator for at least 4 days for the seeds to take on a pickled flavor.
