Pickled Mustard Seeds

Description

Pickled Mustard Seeds are prepared by boiling yellow mustard seeds multiple times with fresh water, a process that softens and swells the seeds to a palatable texture. After at least eight cycles of boiling and straining, the seeds are combined with a vinaigrette made from white wine vinegar, honey, and salt. The honey can be gently warmed to better integrate with the vinegar. The mixture is sealed in a jar and refrigerated for a minimum of four days to allow the seeds to absorb the pickling flavors fully.

The final product offers mustard seeds that are less harsh than raw seeds but retain a slight pungency balanced by sweetness and acidity. These pickled seeds can add a unique complement to salads, sauces, or charcuterie boards and contribute piquant texture to recipes.

  • 8 oz white wine vinegar
  • 2 oz yellow mustard seeds
  • 3 tbsp honey
  • ½ tsp salt

Instructions

  1. Put the mustard seeds into a pot with enough water to cover them.
  2. Bring to a boil. Remove from the heat and strain the mustard seeds through a mesh sieve.
  3. Return the mustard seeds to the pot and add fresh water. Bring to a boil, remove from heat and strain. Repeat this for another 6 times at least for a total of 8 times.
  4. The mustard seeds will expand and become softer.
  5. In a mason jar mix the salt, honey and vinegar. Feel free to warm the honey a little bit, this will help mix it with the vinegar. Add the strained mustard seeds, screw the lid on and store the Pickled Mustard Seeds in the refrigerator for at least 4 days for the seeds to take on a pickled flavor.
