Pico de Gallo

This refreshing Pico de Gallo recipe features fresh tomatoes, onions, jalapeños, cilantro, and lime juice for a bright and flavorful condiment that's perfect for tacos, burritos, or as a dip with tortilla chips.

Ingredients

  • 4 large Roma tomatoes approx 1 lb, diced
  • 1 medium jalapeño seeds and membranes removed, diced
  • ½ cup white onion finely diced
  • 1 teaspoon garlic minced
  • ¼ cup cilantro chopped
  • 1 lime juiced
  • ⅛ teaspoon salt more to taste

Instructions

  1. Finely dice the tomato, onion, jalapeno and cilantro.
  2. Add the diced ingredients to a medium size bowl. 
  3. Squeeze the lime juice over the ingredients. Sprinkle with salt and pepper. Taste and add more lime/salt/pepper to taste. 
  4. Cover and let this sit in the fridge for at least 30 minutes to chill and let the flavors meld together. This also lets the juices release from the tomato and softens the jalapeno and onion. 

Notes

  • Storage: refrigerate in a sealed container for up to 5 days.
