Pico De Gallo Stuffed Avocados
Pico De Gallo Stuffed Avocados feature ripe avocado halves filled with a fresh salsa made from diced Roma tomatoes, white onion, cilantro, serrano pepper, and lime juice. The mix is seasoned lightly with salt to brighten the flavors. This makes a simple, refreshing dish that highlights creamy avocado paired with crisp, tangy, and slightly spicy pico de gallo. It serves well as a light snack, appetizer, or side.
Ingredients
Pico de Gallo
- 2 Roma tomato deseeded and diced
- 1/3 cup white onion finely diced
- 1/2 bunch cilantro finely chopped
- 1/2 Serrano pepper finely chopped
- 1/2 lime juiced
- 1/4 tsp salt
Avocado
- 2 avocado halved and deseeded
Instructions
- Prepare all the ingredients for the pico de gallo. Combine ingredients in a bowl and thoroughly mix until combined.
- Cut the avocados in half and take out the seed. Spoon the pico de gallo into the middle of the avocado. Serve and enjoy!
