Pico de Gallo

  • 2 Roma tomato deseeded and diced
  • 1/3 cup white onion finely diced
  • 1/2 bunch cilantro finely chopped
  • 1/2 Serrano pepper finely chopped
  • 1/2 lime juiced
  • 1/4 tsp salt

Avocado

  • 2 avocado halved and deseeded

Instructions

  1. Prepare all the ingredients for the pico de gallo. Combine ingredients in a bowl and thoroughly mix until combined. 
  2. Cut the avocados in half and take out the seed. Spoon the pico de gallo into the middle of the avocado. Serve and enjoy!
  3. If you happen to have leftover pico de gallo, you can combine it with yogurt to make my creamy pico de gallo recipe. 

Notes

  • One serving corresponds to half an avocado filled with pico de gallo salsa.
  • This recipe yields approximately 1 1/2 cups of pico de gallo salsa.
