Pina Colada Fruit Salad

This tropical fruit salad features fresh fruit that’s tossed in pineapple juice, coconut and almond extracts, and piña colada mix. Don't worry, this easy fruit salad is non-alcoholic!

Ingredients

Fruit Salad
  • 2 cups fresh strawberries hulled and halved
  • 1 cup seedless red grapes
  • 1 cup seedless green grapes
  • 1 cup fresh blueberries
  • 1 cup Canned Pineapple Chunks drained; reserve juice
  • ½ cup loosely packed sweetened coconut flakes
Dressing
  • ⅓ cup non-alcoholic pina colada mix you want liquid, not the frozen cans
  • ¼ cup pineapple juice
  • ¼ teaspoon coconut extract
  • ¼ teaspoon almond extract

Instructions

  1. To a large bowl, add the strawberries, grapes, blueberries, pineapple chunks, and optional coconut; set aside.
  2. To a medium bowl, add the pina colada mix, pineapple juice, extracts, and whisk to combine. Depending on how ‘saucy’ you like your fruit salad, feel free to add more pina colada mix or pineapple juice.
  3. Pour over the fruit, toss to combine, and refrigerate to chill before serving.

Notes

  • Fruit salad will keep airtight in the fridge for up to 3 days.
