Piña Colada Popsicle Cocktails
This recipe creates boozy piña colada frozen popsicles combining coconut cream, frozen pineapple, pineapple juice, orange liqueur, and coconut-flavored rum. The ingredients are blended and poured into freeze-pop sleeves before freezing solid. These popsicles offer a refreshing, tropical cocktail experience in a portable frozen form, ideal for warm weather enjoyment by the pool or at outdoor gatherings.
Ingredients
- ⅓ cup coconut cream
- 2-3 cups pineapple frozen
- 6 oz pineapple juice (1 small can)
- 2 oz orange liqueur
- 6-8 oz rum coconut flavored
- 1 cup ice cubes
Instructions
- Add all of the ingredients into a high speed blender. Note: always start with less Rum and add more as needed.
- Blend until everything is combined. Taste the mixture; add more Rum if desired. 8 ounces is the maximum amount I recommend.
- Use a kitchen funnel to pour the pina colada mixture into individual plastic freeze pop sleeves. Only fill to the line and seal (removing as much air as possible from each sleeve).
- Transfer them onto a small baking sheet and freeze for at least 6 hours or until completely frozen.
- Enjoy poolside or wherever a boozy freeze pop tastes best!
Notes
- Store frozen popsicles for up to 3 months.
- Limit rum to 8 ounces or less to ensure popsicles freeze properly.
