Piña Colada Popsicle Cocktails

Report
This recipe creates boozy piña colada frozen popsicles combining coconut cream, frozen pineapple, pineapple juice, orange liqueur, and coconut-flavored rum. The ingredients are blended and poured into freeze-pop sleeves before freezing solid. These popsicles offer a refreshing, tropical cocktail experience in a portable frozen form, ideal for warm weather enjoyment by the pool or at outdoor gatherings.

Description

Piña Colada Popsicle Cocktails blend ingredients typical to the classic drink — coconut cream, pineapple, pineapple juice, rum, and orange liqueur — into a slushy, boozy freeze pop. The use of frozen pineapple reduces dilution while creating a thick texture melted down by blending. Measuring the rum carefully and maxing it at 8 ounces ensures the popsicles freeze properly without becoming too soft. Sealing the mixture in freezer sleeves allows easy portion control and transport.

The method is straightforward: blend until smooth, fill the sleeves just to the filling line, seal tightly removing air pockets, then freeze at least six hours until fully firm. These popsicles offer a novel way to enjoy a tropical cocktail on a hot day without needing a glass or additional mixers.

Storage notes specify freezing for up to three months. The recipe balances alcohol content and freeze-ability to maintain texture and booziness. Adjust rum level carefully to avoid popsicles that won't solidify.

Ingredients

Servings
  • cup coconut cream
  • 2-3 cups pineapple frozen
  • 6 oz pineapple juice (1 small can)
  • 2 oz orange liqueur
  • 6-8 oz rum coconut flavored
  • 1 cup ice cubes

Instructions

  1. Add all of the ingredients into a high speed blender. Note: always start with less Rum and add more as needed.
  2. Blend until everything is combined. Taste the mixture; add more Rum if desired. 8 ounces is the maximum amount I recommend.
  3. Use a kitchen funnel to pour the pina colada mixture into individual plastic freeze pop sleeves. Only fill to the line and seal (removing as much air as possible from each sleeve).
  4. Transfer them onto a small baking sheet and freeze for at least 6 hours or until completely frozen.
  5. Enjoy poolside or wherever a boozy freeze pop tastes best!
