Ingredients

  • 2 Tbsp olive oil
  • ½ lemon, juiced (1-2 Tbsp juice)
  • 1 garlic clove, minced
  • 1 ½ tsp cumin
  • 1 ½ tsp sweet paprika
  • ¾ tsp ground coriander seeds
  • ½ tsp oregano
  • ½ tsp salt
  • ¼ tsp Turmeric
  • 1/3 tsp cayenne
  • 1/3 tsp ground black pepper
  • 1 lb pork loin, cut into 1 inch cubes
  • 8 (6 inch) Wooden skewers

Instructions

    Cup of Yum
  1. In a medium bowl, mix oil, lemon juice, garlic, and spices. Add the pork cubes and mix by hand until all the pork is coated. Cover and marinade for at least 1 hour in the refrigerator (up to overnight).
  2. When you are ready to cook your pork, preheat your grill to a medium heat, roughly 350F. (You should be able to hold your hand 4-5 inches above the cooking grate for 5-7 seconds).
  3. Soak the wooden skewers in water for 1 minute. Then, thread the marinated pork cubes onto the skewers.
  4. Grill the skewers until the pork pieces are firm and cooked through, turning once, roughly 2-3 minutes per side. (The cooking time will depend on the heat of your grill.)
  5. Serve the skewers with lemon wedge and mojo picon as a hot or cold appetizer.
