- 2 cups (10 oz/284 g) frozen pineapple chunks
- 2 tablespoons honey (or agave)
- ¼ cup (2 oz/57 g) full fat plain yogurt
- ½ tablespoon fresh lemon juice
- 2 tablespoons Toasted coconut flakes
Notes
- Frozen pineapple will allow this recipe to set up faster but you can use fresh pineapple instead. You may need to increase the freezing time by an hour or two.
- You can use lowfat or nonfat yogurt but for the creamiest results, use full fat yogurt.
- If you want to increase the coconut flavor, you can use a coconut flavored yogurt or a coconut milk based yogurt.
- For a refreshing variation, try replacing the lemon juice with lime juice and a few gratings of fresh ginger root.
- This is best when eaten a within two weeks of making it as it can become a bit icy in the freezer after a while.
