Pineapple Casserole

This Southern pineapple casserole is pineapple, cheese and buttery crackers, all baked together to create a sweet and savory side dish. A unique and unexpected accompaniment to turkey, ham or chicken, and it always gets rave reviews.

Ingredients

  • 2 ounce cans pineapple chunks drain and reserve 1/4 cup juice
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 6 tablespoons all purpose flour
  • 2 cups shredded cheddar cheese
  • 40 buttery crackers such as Ritz, crumbled
  • 1/2 cup butter melted
  • 1 tablespoon parsley chopped, optional
  • cooking spray

Instructions

  1. Preheat the oven to 350 degrees F. Coat a 9 inch square pan or 2 quart baking dish with cooking spray.
  2. Place the pineapple, 1/4 cup pineapple juice, granulated sugar, brown sugar, flour and cheese in a large bowl. Stir to combine.
  3. Pour the pineapple mixture into the pan and spread into an even layer.
  4. In a small bowl, mix together the crackers and butter.
  5. Sprinkle the crackers over the pineapple mixture.
  6. Bake for 25 to 30 minutes or until topping is golden brown. Add parsley if desired, then serve.

Notes

  • Be sure to use pineapple packed in juice, not heavy syrup. You will need to reserve some of the juice from the cans to use in the recipe.
  • I typically use a buttery cracker such as Ritz crackers. Any buttery style cracker will work just fine.
  • This casserole is best when served immediately, as the crackers can soften over time.
