This Southern pineapple casserole is pineapple, cheese and buttery crackers, all baked together to create a sweet and savory side dish. A unique and unexpected accompaniment to turkey, ham or chicken, and it always gets rave reviews.

Ingredients
- 2 ounce cans pineapple chunks drain and reserve 1/4 cup juice
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 6 tablespoons all purpose flour
- 2 cups shredded cheddar cheese
- 40 buttery crackers such as Ritz, crumbled
- 1/2 cup butter melted
- 1 tablespoon parsley chopped, optional
- cooking spray
Instructions
- Preheat the oven to 350 degrees F. Coat a 9 inch square pan or 2 quart baking dish with cooking spray.
- Place the pineapple, 1/4 cup pineapple juice, granulated sugar, brown sugar, flour and cheese in a large bowl. Stir to combine.
- Pour the pineapple mixture into the pan and spread into an even layer.
- In a small bowl, mix together the crackers and butter.
- Sprinkle the crackers over the pineapple mixture.
- Bake for 25 to 30 minutes or until topping is golden brown. Add parsley if desired, then serve.
Notes
- Be sure to use pineapple packed in juice, not heavy syrup. You will need to reserve some of the juice from the cans to use in the recipe.
- I typically use a buttery cracker such as Ritz crackers. Any buttery style cracker will work just fine.
- This casserole is best when served immediately, as the crackers can soften over time.
