Ingredients

  • 1/3 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 can pineapple tidbits drained
  • 1 can pineapple drained, crushed
  • 2 cups cheddar cheese shredded, sharp
  • 1 ritz cracker approximately 30-40 crackers, crushed, sleeve
  • 1/4 cup butter melted

Instructions

  1. Preheat the oven to 350 degrees F and spray either a 9x9 baking dish or a 1 1/2 quart casserole pan with a non-stick cooking spray.
  2. In a large mixing bowl, whisk together the flour and sugar.  Then stir in the drained pineapple and the shredded cheddar cheese.
  3. Pour this mixture into the baking dish or casserole pan.
  4. In a separate small mixing bowl, stir together the crushed crackers and melted butter.
  5. Sprinkle this mixture on top of the casserole.
  6. Bake for 35-40 minutes until the casserole is heated through and the top of the casserole is browned.
  7. Serve immediately while warm and enjoy!

Notes

  • This casserole is versatile enough to serve as a dessert or a side dish depending on your meal plan.
  • Fresh pineapple is not recommended as it can add too much moisture and affect the casserole's texture.
