Pineapple Fried Rice

Ingredients

  • 2 tbsp olive oil
  • 1 tsp garlic minced
  • 1 tsp  ginger minced
  • 1/2 cup onion Chopped
  • 1/2 cup carrot Chopped
  • 1/2 cup red bell pepper Chopped
  • 1/2 cup green peas
  • 1 1/2 cup pineapple, chopped Chopped
  • 1 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 tsp ground white pepper
  • salt to taste
  • 4 cups  cooked jasmine rice
  • 1/4 cup green onions Chopped

Instructions

  1. Heat a large skillet on a medium flame. Add olive oil, ginger, garlic; saute for a minute.
  2. Add the onion and cook till the onions turn translucent. Add in the carrots and bell peppers. Cook for 3-4 minutes , add the green peas and pineapple. Cook for 2 more minutes.
  3. Add the soy sauce, vinegar, white pepper, salt. Mix it.
  4. Add the cooked rice and toss them until well combined.
  5. Finally, add the green onions and transfer them to a plate and serve while it is still warm.
