Pineapple ice Lolly

A Pineapple Ice Lolly is the perfect refreshing summer treat that will cool you down on a hot day. Quick and simple to make with just 2 ingredients.

Ingredients

  • 200 g fresh pineapple Cut into chunks
  • 200 ml coconut milk

Instructions

    Cup of Yum
  1. Put all of the ingredients into a blender.
  2. Blend until smooth.
  3. Pour into lolly moulds and freeze for at least 5 hours.

Notes

  • If using larger lolly moulds, the mixture may take longer to freeze.
  • If you have any mixture that doesn't fit into the moulds, then you can just drink it like a smoothie.
  • For some added texture, you can add some finely chopped pineapple.
  • You don't have to use pineapple. Other tropical fruits like mango and papaya work well.
