Ingredients

  • 1/2 cup pineapple fresh, chunks
  • 2 lices lime
  • 1 mint 8 leaves, spring
  • ice
  • 2 oz white rum
  • 1/2 oz simple syrup sugar free
  • 3 oz soda water

Instructions

    Cup of Yum
  1. In a glass of choice muddle the pineapple and lime until the juice is released.
  2. Add the mint and muddle a couple more times.
  3. Add ice.
  4. Then add rum, simple syrup, and top it off with soda water. 
  5. Stir and enjoy.

Notes

  • Add pineapple pieces as garnish for extra color and flavor when serving.
  • To make sugar-free simple syrup, simmer equal parts water and sugar substitute like monk fruit until the sweetener dissolves, then cool before use.
