Ingredients
- 10 mint leaves plus 2 sprigs for garnish
- 6 ounces rum
- 2 ounces fresh lime juice (about 2 limes, plus additional lime for slices for garnish)
- 4 ounces pineapple juice (plus 2 slices of pineapple for garnish)
- 1/2 ounce maple syrup
- ice
- club soda
Instructions
- Muddle the 8 mint sprigs with the rum, juices and maple syrup in a cocktail shaker.
- Place ice in cocktail shaker then shake well.
- Strain the cocktail shaker while pouring the liquid over ice in two highball glasses.
- Top off each glass with a splash of club soda. Garnish each with a slice of pineapple, lime and a sprig of mint.
