Pineapple Moscow Mule
Bring on those summer vibes with this light, tropical and delicious Pineapple Moscow Mule. It's got the most refreshing kick thanks to a hint of jalapeño!

Ingredients
- ½ cup Ice cubes
- 2 oz vodka of choice
- 2 oz pineapple juice
- ¾ oz jalapeno limeade
- 6 oz ginger beer
- Jalapeño **see notes for spice level
For garnish (all optional)
- pineapple
- jalapeño slices
- fresh mint
Instructions
- Add ice, vodka, pineapple, and jalapeno limeade juice to the glass.
- **If you do not have Jalapeno Limeade (found seasonally at Trader Joe's), simply muddle 3-4 jalapeno slices with 2 ounces of simple syrup and a mint leaf. Strain the syrup into the cocktail to turn up the heat. **
- Top with ginger beer. Stir.
- Garnish your drink with slices of pineapple and jalapeno. Enjoy!

Notes
- If you do not have Jalapeno Limeade (found seasonally at Trader Joe's), simply muddle 3-4 jalapeno slices with 2 ounces of simple syrup and a mint leaf. Strain the syrup into the cocktail to turn up the heat.
- Garnish with a tajin rim for more kick!
- Because ginger beer is carbonated, I don’t recommend making these well in advance. However, you could combine all of the other ingredients and then add the ginger beer just prior to serving.
- To make this a mocktail, just leave out the vodka and using ginger ale instead of ginger beer!
