Ingredients

  • 9 inch pie crust homemade or store-bought
Filling:
  • 20 oz canned crushed pineapple
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
  • 1/4 cup cornstarch
  • 1/2 cup shredded coconut
  • 8 oz cream cheese room temperature
  • Juice of 1 lime
  • zest of 1 lime
  • 1 teaspoon coconut extract

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Press the pie crust into a pie dish.
  3. Stir all pie filling ingredients together in a large bowl.
  4. Transfer the filling into the crust and smooth it with a spoon on top.
  5. Bake for 35-40 minutes.
  6. Let cool before slicing.
  7. Serve topped with ice cream.
