Pineapple Popsicles

Ingredients

  • 3 cups pineapple fresh, cut into even chunks
  • ½ lime zest
  • ¼ cup lime juice fresh
  • 2 pinches sea salt
  • 2 teaspoon sugar caster
  • 2 tablespoon mint freshly chopped
  • ⅓ cup tequila
  • 2 tablespoon triple sec or Cointreau

Instructions

  1. Blend all the ingredients in a blender or food processor until well combined.
  2. Pour the mixture into the ice pop moulds and place in the freezer for 2 hours.
  3. When the mixture is semi-set pierce an ice cream stick through the centre of each ice pop.
  4. Place back in the freezer and allow them to set overnight before serving.
  5. To serve them, run the moulds under warm water for 10 seconds to set them loose and serve immediately.
