Pineapple Salsa

Sweet and spicy fresh pineapple salsa is deliciously addictive. Enjoy it with your favorite tortilla chips, on fish tacos, and more!

Ingredients

  • 2 cups pineapple, diced
  • 6 Roma tomatoes, cored and diced
  • 1 bunch fresh cilantro, chopped (about 1 cup)
  • ½ cup red onion, chopped
  • 3-4 jalapeno peppers, seeded and chopped
  • 2 tablespoons lime juice
  • ½ teaspoon garlic salt (with parsley flakes)
  • pepper

Instructions

  1. Add pineapple, tomatoes, cilantro, red onion, and jalapenos to a large bowl. 
  2. Add lime juice and toss to combine. Season with salt and pepper, to taste.
  3. Let sit at room temperature for 30 minutes for all flavors to blend. Or chill until serving time. Serve with tortilla chips.

  • We prefer to use fresh pineapple, but canned pineapple can be used in a pinch.
  • Raw ripe pineapple has a high pH balance, and the acid can cause your mouth to “burn”. Using fresh lime juice helps neutralize the acidity.
  • We love storing salsa in Mason jars, but any airtight container can be used.
  • For milder heat, remove the jalapeño's membrane and seeds; for more heat, include them as desired.
