Ingredients

  • 2 cups pineapple diced
  • 6 Roma tomato cored and diced
  • 1 bunch cilantro chopped (about 1 cup, fresh
  • ½ cup red onion chopped
  • 3-4 jalapeno pepper seeded and chopped
  • 2 tablespoons lime juice
  • ½ teaspoon garlic salt with parsley flakes
  • black pepper

Instructions

  1. Add pineapple, tomatoes, cilantro, red onion, and jalapenos to a large bowl. 
  2. Add lime juice and toss to combine. Season with salt and pepper, to taste.
  3. Let sit at room temperature for 30 minutes for all flavors to blend. Or chill until serving time. Serve with tortilla chips.

Notes

  • Store in an airtight container in the refrigerator for up to 4 days to maintain freshness.
  • Fresh pineapple is preferred; canned pineapple may be used if needed.
  • Remove jalapeño seeds and membranes to reduce heat, or include them for spicier salsa.
  • Lime juice balances the pineapple's acidity to reduce mouth irritation.
  • Mason jars or any airtight containers work well for storage.
