- 2 cups diced pineapple
- 1 red bell pepper diced
- ¼ cup finely diced red onion
- 1 Jalapeño seeded & minced
- ½ lime juiced
- 3 tablespoons chopped fresh cilantro
- ½ tablespoon olive oil
- ½ teaspoon cumin
- salt to taste
Instructions
- Combine all ingredients in a bowl and gently stir.
- Let stand at room temperature for 30 minutes before serving.

For a crisp salsa, use fresh veggies!
If using canned diced pineapple drain the juices before adding to the salsa.
