Pineapple Salsa Vinaigrette

The right side dish can take your barbecue to the next level! This Pineapple Salsa recipe is the perfect addition to your Summer menu and is a great compliment to all things grilled.

Ingredients

  • 1 pineapple diced - peel, and core discarded
  • 3 to matoes cored and diced
  • 1 green bell pepper cored, seeded and diced
  • ½ onion diced
  • ½ cup of a good olive oil
  • ¼ white wine vinegar or more if you like it more vinegary
  • salt and pepper to taste
  • 2 Tbsp of finely chopped cilantro

Instructions

    Cup of Yum
  1. Add the pineapple and vegetables to a large bowl
  2. Add the oil and vinegar
  3. Season with salt and pepper
  4. Add the cilantro and give it a stir to combine everything
  5. Cover and let it sit in the fridge for at least a half hour
