Ingredients

  • 1 pound large shrimp peeled and deveined
  • salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 red bell pepper diced
  • 2 cloves garlic minced
  • 2 cups pineapple cut into chunks
  • 1 tablespoon soy sauce low sodium
  • 1 teaspoon honey
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 cup cilantro chopped

  1. Season the shrimp with salt and pepper, and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add the red bell pepper and garlic, sautéing until the pepper is tender.
  3. Add the seasoned shrimp to the skillet and cook until they turn pink, about 2-3 minutes per side.
  4. Stir in the pineapple chunks, soy sauce, honey, and red pepper flakes, cooking until the pineapple is heated through and the sauce thickens slightly.
  5. Remove from heat and garnish with chopped cilantro before serving.
