Pineapple Smoothie

Ingredients

  • 1 ½ cups frozen pineapple pieces
  • ½ medium ripe banana peeled and cut into pieces
  • ½ cup nonfat plain Greek yogurt or vanilla Greek yogurt
  • 1 teaspoon pure vanilla extract omit if using vanilla yogurt
  • 1 to 2 teaspoons honey optional if using vanilla yogurt
  • ½ cup unsweetened almond milk or milk of choice plus additional as needed

  1. Place all of the ingredients in a high-speed blender: pineapple, banana, Greek yogurt, vanilla, honey, and 1/2 cup almond milk.
  2. Blend until smooth. Depending upon the size and power of your blender, you may need to stop it and scrape down the pitcher a couple of times. If the mixture is too thick to blend, splash in a little more almond milk, stir to move the contents of the blender around, and blend again. Taste and add additional honey if you would like the smoothie sweeter. Pour into a glass and enjoy!

  • TO STORE: Store leftover pineapple smoothie in an airtight glass or jar for up to 1 day. Shake or stir, then enjoy.
  • TO FREEZE: Freeze leftovers in an airtight, freezer-safe storage container or freezer bag for up to 3 months. Let thaw overnight in the refrigerator before serving.
