Ingredients

  • 4 pink grapefruits
  • 3 tablespoons boiling water
  • 1 ½ teaspoons honey
  • 1 tablespoon thinly sliced mint leaves

Instructions

  1. Cut the peel of the pink grapefruits and cut the segments away from the membranes (see How to Segment Citrus Fruits). Place the segments in a bowl, reserve the juice for another use and discard the membranes.
  2. In a small bowl, combine the boiling water and honey, and stir until the honey dissolves. Stir in the mint leaves and steep for 5 minutes.
  3. Pour the honey mixture over the grapefruit and toss gently to combine. Serve.
