Ingredients
- 1 (1.4-oz.) box sugar-free pistachio pudding mix
- 2 cups fat free milk or milk of choice (I used Fairlife)
- 1 cup lite Cool Whip thawed & divided
Pecan Crumble:
- 3/4 cup quick oats (60g)
- 3 Tbsp light butter (42g) melted
- 3 Tbsp brown sugar (36g) I used Swerve
- 3 Tbsp chopped pecans (23g)
Instructions
- Whisk together the pudding mix and milk according to package directions. Add to the fridge to thicken while you make the crumble.*
- In a small bowl, mix together all the ingredients for the pecan crumble.
- Layer four small glasses with 2 Tbsp of EACH: pistachio pudding, cool whip, crumble, pistachio pudding, cool whip, and lastly the crumble.
- Cover and chill for at least an hour and enjoy!

- *You will only use about half of the pudding so you can enjoy the rest however you please! Also yummy with crunchy granola or Oreo's crumbled on top!

- To make dairy-free: use dairy-free milk, dairy-free cool whip (like Truwhip) and dairy-free butter.
