Ingredients

  • 2 cups self rising flour (or 2 cups all purpose flour plus 3 teaspoons baking powder and ½ teaspoon salt)
  • 1 cup Greek yogurt (plain 2% or 0%)

Instructions

    Cup of Yum
  1. In a medium sized bowl add the greek yogurt.
  2. Gradually add in the flour. Mix after each addition.
  3. When a dough ball starts to form turn the dough out onto a work surface (ex. clean kitchen counter).
  4. Knead the dough for 5 – 10 minutes or until a smooth elastic dough forms.
  5. Shape the dough into a circle and place back in the bowl. Cover with a lint free towel or plastic wrap.
  6. Let the dough rest for 15 minutes.
  7. Roll the dough out into a long and slice into 5 - 6 even pieces.
  8. Roll out each piece into a thin pita shape. Note: the dough will puff up while cooking so roll it out as thin as possible.
  9. Heat a medium sized frying pan with no oil or butter. Cooking one pita at a time, add a pita to the pan.
  10. Once the pita starts to bubble up, approximately 2-3 minutes, use tongs or a spatula to flip the pita bread.
  11. Try not to touch the pita too much or it will not puff up. Once it is flipped it will start to puff up.
  12. Once it fully puffs up, approximately 2-3 minutes, flip one more time and cook to desired brownness (if you like it crispy cook an additional 1-2 minutes per side).
  13. Remove the pita from the heat and wrap in a lint free towel to keep warm while cooking the remaining pitas. Serve and enjoy!
