Ingredients
- 1 cup cooked quinoa made from ⅓ cup uncooked quinoa.
- 3 eggs lightly beaten
- 1 cup shredded Italian-blend cheeses
- ¼ cup olives sliced
- ½ teaspoon Italian seasoning
- ¼ teaspoon salt
- 1/2 cup Pizza Sauce warmed for dipping

Instructions
- Preheat oven to 350° F. Lightly coat 12 mini muffin cups with nonstick cooking spray.
- In a large bowl, combine all ingredients. Divide quinoa mixture between prepared muffin cups.
- Bake for 20 to 25 minutes or until golden brown. Serve with pizza sauce.

- Recipe: This recipe is adapted from Better Homes & Garden
- Storage: Store any leftovers in an airtight container. They will last about 3-4 days in the fridge. To reheat, just place them in microwave or toaster oven.
- Freezing Instructions: You can also freeze the pizza quinoa bites for up to 3 months. I would recommend freezing them after cooked though. To re-heat, thaw in the fridge overnight and bake in a 350°F oven for a few minutes until crispy.
- Make Ahead Tips: I strongly suggest cooking the quinoa in advance. That way it's cooked and cooled and ready to be tossed into the other ingredients. This is a great recipe for leftover quinoa.
- Substitutes: For best results, follow the recipe as is. However you can use any cheese you'd like, mix up the spices and add any other pizza toppings you'd like.
