Pizza Soup
Pizza Soup combines Italian sausage, mushrooms, garlic, and tomatoes with classic pizza herbs and pepperoni for a rich, hearty broth. The sausage and vegetables are browned before simmering with crushed and diced tomatoes and dried spices. Parmesan and mozzarella cheeses add creamy finishing touches, and fresh herbs can garnish for brightness. This soup offers familiar pizza flavors in a warm, comforting bowl ideal for cooler days or casual meals.
Ingredients
- ½ lb. Italian sausage
- 1 yellow onion finely chopped, large
- 8 oz. button mushrooms sliced (or substitute canned mushrooms, fresh
- 3 garlic minced, large cloves
- 1 c. water
- 2 15- oz. crushed tomatoes or 1 28-oz. can Red Gold® Crushed Tomatoes, Red Gold® brand
- 1 14.5- oz. petite diced tomatoes with green chilies Red Gold® brand
- 1 tsp. basil dried
- 1 tsp. oregano dried
- ½ tsp. thyme dried
- ½ tsp. rosemary dried
- 4 oz. pepperoni chopped, sliced
- ¼ c. Parmesan Cheese grated
- 1 c. mozzarella cheese shredded
- basil optional garnish, chopped, fresh
- Italian parsley optional garnish, chopped, fresh
Instructions
- In a large saucepan over medium to medium-high heat, sauté sausage and onion, stirring occasionally.
- When the pink color in the sausage has almost disappeared, fold in the mushrooms and garlic. Cook for 5 more minutes, stirring occasionally until mushrooms are softened.
- Add water, crushed tomatoes, diced tomatoes, dried basil, dried oregano, dried thyme, dried rosemary, and pepperoni. Bring to a boil and then immediately reduce heat and simmer for 20 minutes, stirring occasionally.
- Before serving, stir in Parmesan cheese. Top with mozzarella cheese. Garnish with fresh basil and/or parsley, if desired.
Notes
- This recipe is adapted from Red Gold tomatoes and uses their canned products for a consistent tomato base.
