Pizza Soup

Pizza Soup combines Italian sausage, mushrooms, garlic, and tomatoes with classic pizza herbs and pepperoni for a rich, hearty broth. The sausage and vegetables are browned before simmering with crushed and diced tomatoes and dried spices. Ingredients

  • ½ lb. Italian sausage
  • 1 yellow onion finely chopped, large
  • 8 oz. button mushrooms sliced (or substitute canned mushrooms, fresh
  • 3 garlic minced, large cloves
  • 1 c. water
  • 2 15- oz. crushed tomatoes or 1 28-oz. can Red Gold® Crushed Tomatoes, Red Gold® brand
  • 1 14.5- oz. petite diced tomatoes with green chilies Red Gold® brand
  • 1 tsp. basil dried
  • 1 tsp. oregano dried
  • ½ tsp. thyme dried
  • ½ tsp. rosemary dried
  • 4 oz. pepperoni chopped, sliced
  • ¼ c. Parmesan Cheese grated
  • 1 c. mozzarella cheese shredded
  • basil optional garnish, chopped, fresh
  • Italian parsley optional garnish, chopped, fresh

Instructions

  1. In a large saucepan over medium to medium-high heat, sauté sausage and onion, stirring occasionally.
  2. When the pink color in the sausage has almost disappeared, fold in the mushrooms and garlic. Cook for 5 more minutes, stirring occasionally until mushrooms are softened.
  3. Add water, crushed tomatoes, diced tomatoes, dried basil, dried oregano, dried thyme, dried rosemary, and pepperoni. Bring to a boil and then immediately reduce heat and simmer for 20 minutes, stirring occasionally.
  4. Before serving, stir in Parmesan cheese. Top with mozzarella cheese. Garnish with fresh basil and/or parsley, if desired.

Notes

  • This recipe is adapted from Red Gold tomatoes and uses their canned products for a consistent tomato base.
