Description
This Pizza Soup starts by sautéing Italian sausage and onions until the sausage loses its pink color. Mushrooms and garlic are then added and cooked until softened. The soup base combines water, crushed and diced tomatoes with green chilies, and dried Italian herbs like basil, oregano, thyme, and rosemary, plus chopped pepperoni for an extra pizza element. The mixture simmers for twenty minutes to develop flavor depth. Parmesan cheese is stirred in before serving, with shredded mozzarella melting on top for creaminess. Fresh basil or parsley garnish adds a touch of fresh herbaceousness. The result is a tomato-rich broth featuring savory sausage and pepperoni flavors, textured mushrooms, and melted cheese, reminiscent of the toppings on a pizza served in a bowl.
Ingredients
- ½ lb. Italian sausage
- 1 yellow onion finely chopped, large
- 8 oz. button mushrooms sliced (or substitute canned mushrooms, fresh
- 3 garlic minced, large cloves
- 1 c. water
- 2 15- oz. crushed tomatoes or 1 28-oz. can Red Gold® Crushed Tomatoes, Red Gold® brand
- 1 14.5- oz. petite diced tomatoes with green chilies Red Gold® brand
- 1 tsp. basil dried
- 1 tsp. oregano dried
- ½ tsp. thyme dried
- ½ tsp. rosemary dried
- 4 oz. pepperoni chopped, sliced
- ¼ c. Parmesan Cheese grated
- 1 c. mozzarella cheese shredded
- basil optional garnish, chopped, fresh
- Italian parsley optional garnish, chopped, fresh
Instructions
- In a large saucepan over medium to medium-high heat, sauté sausage and onion, stirring occasionally.
- When the pink color in the sausage has almost disappeared, fold in the mushrooms and garlic. Cook for 5 more minutes, stirring occasionally until mushrooms are softened.
- Add water, crushed tomatoes, diced tomatoes, dried basil, dried oregano, dried thyme, dried rosemary, and pepperoni. Bring to a boil and then immediately reduce heat and simmer for 20 minutes, stirring occasionally.
- Before serving, stir in Parmesan cheese. Top with mozzarella cheese. Garnish with fresh basil and/or parsley, if desired.
Notes
- This recipe is adapted from Red Gold tomatoes and uses their canned products for a consistent tomato base.
