Plantain Waffles - Sierra Leone Flavours

Deliciously nutmegy plantain waffles.

Ingredients

  • 1/2 tsp baking powder
  • 1/2 tsp ground nutmeg (or to taste)
  • 2 eggs beaten
  • 1 large ripe plantain , peeled and mashed
  • 2 tbsp maple syrup

Instructions

  1. Switch on waffle maker and dial up to the brown setting you desire.
  2. Preheat waffle maker.
  3. Mix the flour, baking powder and nutmeg in a large bowl and make a hole in the centre.
  4. In a different bowl, whisk together milk, eggs and butter before adding in the mashed plantain and maple syrup and combining thoroughly.
  5. Slowly whisk the milk mixture into the flour to make a batter and don't worry if there are a few lumps.
  6. Pour half a waffle measure cup of batter into each waffle well, close lid and cook until timer has finished and beeps three times.
  7. Repeat until all the waffle mixture is finished.

Notes

  • I prefer the brown setting of 4 for these waffles.
