Deliciously nutmegy plantain waffles.

Ingredients
- 1/2 tsp baking powder
- 1/2 tsp ground nutmeg (or to taste)
- 2 eggs beaten
- 1 large ripe plantain , peeled and mashed
- 2 tbsp maple syrup

Instructions
- Switch on waffle maker and dial up to the brown setting you desire.
- Preheat waffle maker.
- Mix the flour, baking powder and nutmeg in a large bowl and make a hole in the centre.
- In a different bowl, whisk together milk, eggs and butter before adding in the mashed plantain and maple syrup and combining thoroughly.
- Slowly whisk the milk mixture into the flour to make a batter and don't worry if there are a few lumps.
- Pour half a waffle measure cup of batter into each waffle well, close lid and cook until timer has finished and beeps three times.
- Repeat until all the waffle mixture is finished.
Notes
- I prefer the brown setting of 4 for these waffles.
