Poire Belle Helene (Pears Poached in Syrup)

Ingredients

  • 4 pears , firm
  • 4 oz. dark chocolate dessert with 60% cocoa
  • 4 cups water
  • 1 cup caster sugar
  • 1 vanilla pod
  • 1 organic lemon , freshly squeezed
  • 3 tablespoons whole milk
  • 4 scoops vanilla ice cream
  • slivered almonds , roasted

Instructions

  1. In a large saucepan, heat the water, sugar, split and scraped vanilla pod, as well as lemon juice.
  2. Cook for 10 minutes at a low boil.
  3. Peel the pears, keeping the stems and plunge them into the boiling syrup.
  4. Bake for 20 to 30 minutes or until the pears are cooked through.
  5. Turn off the heat and let them cool in the syrup.
  6. When ready to serve, melt the chocolate in a bain-marie.
  7. Add the milk to the chocolate then, using a spatula, smooth the melted chocolate well.
  8. Just before serving, place a pear and a scoop of vanilla ice cream in each cup.
  9. Then, coat with hot chocolate, sprinkle with slivered almonds and enjoy immediately.
