Poire Belle Helene is a French dessert made from pear poached in syrup, served with vanilla ice cream and topped with hot chocolate.

Ingredients
- 4 pears , firm
- 4 oz. dark chocolate dessert with 60% cocoa
- 4 cups water
- 1 cup caster sugar
- 1 vanilla pod
- 1 organic lemon , freshly squeezed
- 3 tablespoons whole milk
- 4 scoops vanilla ice cream
- slivered almonds , roasted

Instructions
- In a large saucepan, heat the water, sugar, split and scraped vanilla pod, as well as lemon juice.
- Cook for 10 minutes at a low boil.
- Peel the pears, keeping the stems and plunge them into the boiling syrup.
- Bake for 20 to 30 minutes or until the pears are cooked through.
- Turn off the heat and let them cool in the syrup.
- When ready to serve, melt the chocolate in a bain-marie.
- Add the milk to the chocolate then, using a spatula, smooth the melted chocolate well.
- Just before serving, place a pear and a scoop of vanilla ice cream in each cup.
- Then, coat with hot chocolate, sprinkle with slivered almonds and enjoy immediately.
