Pollo Asado

Ingredients

  • 2 pounds chicken thighs boneless and skinless
  • 2 tbsp olive oil
  • ⅓ cup fresh orange juice
  • 3 tbsp lime juice
  • ½ tsp sea salt
  • ½ tsp black pepper
  • 2 tsp minced garlic 
  • 1 tsp onion powder
  • 2 tsp achiote powder or paprika
  • 2 tsp oregano
  • 1 tsp cumin

Instructions

  1. First, add chicken thighs and all ingredients to a large bowl. Toss until fully coated in juices and seasonings. Either make this recipe immediately or marinate the chicken in this mixture for up to 2 hours.
  2. Add the olive oil to a large nonstick skillet over medium heat.
  3. Once the oil is hot, add the seasoned chicken to the skillet.
  4. Cook for 5 minutes. Then, carefully flip.
  5. Cook for another 5 minutes.
  6. Reduce the heat to medium low. Continue cooking, flipping occasionally, until chicken is fully cooked through. Chicken should be 165 degrees Fahrenehit internally.
  7. Finally, remove the pollo asado from the pan. Top with fresh herbs if desired. Serve!

  • ½ inch thickness.

  • This recipe can be made with chicken breasts as well.  Use a meat mallet to pound to ½ inch thickness.
  • Either make this recipe immediately or allow the chicken to marinade for up to 2 hours.
  • Even without the marinade time, this recipe is very flavorful.
  • Feel free to adjust the seasonings to suit your taste.
  • Use a meat thermometer to measure internal temperature.  Chicken is safe to eat at 165 degrees Fahrenheit.
  • Store leftovers in the fridge for up to 4 days.
