Ingredients
- 2 pounds chicken thighs boneless and skinless
- 2 tbsp olive oil
- ⅓ cup fresh orange juice
- 3 tbsp lime juice
- ½ tsp sea salt
- ½ tsp black pepper
- 2 tsp minced garlic
- 1 tsp onion powder
- 2 tsp achiote powder or paprika
- 2 tsp oregano
- 1 tsp cumin
Instructions
- First, add chicken thighs and all ingredients to a large bowl. Toss until fully coated in juices and seasonings. Either make this recipe immediately or marinate the chicken in this mixture for up to 2 hours.
- Add the olive oil to a large nonstick skillet over medium heat.
- Once the oil is hot, add the seasoned chicken to the skillet.
- Cook for 5 minutes. Then, carefully flip.
- Cook for another 5 minutes.
- Reduce the heat to medium low. Continue cooking, flipping occasionally, until chicken is fully cooked through. Chicken should be 165 degrees Fahrenehit internally.
- Finally, remove the pollo asado from the pan. Top with fresh herbs if desired. Serve!

- This recipe can be made with chicken breasts as well. Use a meat mallet to pound to ½ inch thickness.
