Popeyes Fries

Ingredients
- 3 large potatoes Russet or Idaho
- 2.5 cups flour
- 2 cups seltzer water or club soda
- 2 tbsps corn starch
Mix Spices (Cut in Half)
- 2 tbsp salt
- 1 tsp Turmeric
- 1 tbsp Adobo
- 1 tbsp garlic powder
- 2 tbsps paprika
- 1 tbsp chili powder
- 1 tsp sugar
- 1 tsp pepper
- Cajun seasoning to taste
Secret sauce
- 1/2 cup mayo
- 1/2 cup Sweet chili sauce
- 1 tbsp Cajun Seasoning
- 1 tbsp honey
Instructions
- Begin by peeling potatoes and slicing into thin strips.
- Rinse potatoes with warm water until water runs clear.
- Pat potatoes dry, set aside.
- Mix all seasonings together, and separate seasoning into two parts.
- Mix flour, corn starch, and 1/2 your seasonings mix. Then, slowly whisk in the seltzer water until a thick batter develops.
- Dip fries into batter and begin frying at 375 degrees in small batches until fries are golden brown.
- Season with other part of the seasoning mixture.
- Serve with sauce
