Popovers
Popovers are light, hollow rolls with a crisp exterior and airy interior, made from a simple batter of milk, eggs, flour, salt, and powdered sugar. Baked in a buttered popover pan at a high temperature, they puff dramatically during baking. This recipe yields twelve popovers that can be served warm with various toppings such as softened butter, fruit jams, or honey, offering a versatile accompaniment or snack.
Ingredients
- 1½ cups milk whole
- 6 egg
- 1½ cups all-purpose flour
- ¾ teaspoon salt
- 4½ teaspoons powdered sugar
Instructions
- Preheat oven to 425 degrees F and position the rack in the lower third of the oven.
- Generously butter a 12-cup popover tin; set aside.
- In a medium bowl, whisk together the milk and eggs. Add the flour, salt and powdered sugar and whisk briefly to incorporate the dry ingredients. There may still be small lumps throughout the batter, which is fine; do not overmix.
- Fill each cup of the popover tin with 5 tablespoons of the batter. Bake until the popovers are very puffed and rise above the top of the tin by 3 inches, about 30 minutes. Immediately turn the popovers out of the pan and serve warm.
Notes
- Use a well-buttered popover tin to ensure easy release and proper rising.
- If using a dark, non-stick pan, reduce the oven temperature by 25 degrees to avoid excessive browning.
- Serve popovers warm with softened butter, jams, honey, or other preferred toppings.
- Store leftovers in an airtight container at room temperature for up to three days for best texture.
- Popovers freeze well when cooled; store in a rigid container to avoid crushing and freeze up to one month.
