Popovers
Description
The Popovers recipe combines milk, eggs, and flour with a touch of salt and powdered sugar to create a thin batter that rises high and develops a crispy crust when baked in a well-buttered popover tin. Baking at 425°F in the lower third of the oven encourages an even rise and a tender, hollow interior. The technique allows some lumps to remain in the batter, which does not affect the final texture.
The resulting popovers have a delicate, puffed structure with a soft crumb inside and a lightly sweetened note from the powdered sugar. They can be enjoyed with a variety of toppings such as fruit preserves, honey, or savory spreads like bacon jam, making them adaptable for breakfast or teatime.
For serving, popovers are best eaten warm soon after baking to preserve their crisp edges. Leftovers should be stored at room temperature in an airtight container for up to three days. To maintain their texture, they can be reheated gently from frozen or refrigerated using a microwave or toaster oven. The recipe notes advise lowering oven temperature by 25 degrees if using a dark, non-stick popover pan to prevent over-browning.
Ingredients
- 1½ cups milk whole
- 6 egg
- 1½ cups all-purpose flour
- ¾ teaspoon salt
- 4½ teaspoons powdered sugar
Instructions
- Preheat oven to 425 degrees F and position the rack in the lower third of the oven.
- Generously butter a 12-cup popover tin; set aside.
- In a medium bowl, whisk together the milk and eggs. Add the flour, salt and powdered sugar and whisk briefly to incorporate the dry ingredients. There may still be small lumps throughout the batter, which is fine; do not overmix.
- Fill each cup of the popover tin with 5 tablespoons of the batter. Bake until the popovers are very puffed and rise above the top of the tin by 3 inches, about 30 minutes. Immediately turn the popovers out of the pan and serve warm.
Notes
- Use a well-buttered popover tin to ensure easy release and proper rising.
- If using a dark, non-stick pan, reduce the oven temperature by 25 degrees to avoid excessive browning.
- Serve popovers warm with softened butter, jams, honey, or other preferred toppings.
- Store leftovers in an airtight container at room temperature for up to three days for best texture.
- Popovers freeze well when cooled; store in a rigid container to avoid crushing and freeze up to one month.
- Reheat from frozen or refrigerated using a microwave or toaster oven to restore crispness.
