Poppy Seed Chicken Casserole

This Poppy Seed Chicken Casserole is a quick and easy weeknight dinner the family will love. It's a creamy Southern classic that's loaded with protein-rich chicken, sprinkled with delightful poppy seeds, and covered in a blanket of crispy, buttery Ritz crackers. Makes a great freezer meal as well!

Ingredients

  • 3-4 cooked chicken breasts roasted or grilled or boiled and shredded
  • 2 cans 10.5 ounces each cream of chicken soup
  • 8 ounces cream cheese at room temperature
  • ½ cup grated Parmesan cheese
  • 1 tablespoon poppy seeds
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon freshly ground pepper
  • 1 teaspoon Morton kosher salt
  • 1 cup crushed buttery crackers such as Ritz
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat oven to 350° F.
  2. In a large bowl, shred the chicken breasts.
  3. Add cream of chicken soup, parmesan cheese, cream cheese, salt,pepper, onion, garlic powder, and poppy seeds - then fold together untilthoroughly combined.
  4. Melt the butter in a small bowl and use a bit of it to lightly grease the bottom of a 9" x 13" baking dish. Add crushed crackers to the remaining melted butter and toss to coat evenly.
  5. Transfer chicken mixture to baking dish and spread it into an even layer.
  6. Sprinkle buttered crackers over the top of the chicken mixture.
  7. Bake for 30-35 minutes, or until edges are bubbly and crackers are golden brown.
  8. Serve hot and enjoy!
