Ingredients

  • 4 bone-in pork chops
  • 1 cup long grain white rice
  • 1 large onion diced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 1/2 cups chicken broth
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F. In a large skillet, heat olive oil over medium heat and sauté onion and garlic until translucent.
  2. Add rice to the skillet and stir to coat with oil. Pour in chicken broth, bring to a simmer, then remove from heat.
  3. Season pork chops with salt and pepper. Place them on top of the rice mixture in the skillet.
  4. Cover the skillet with foil or a lid and bake in the preheated oven for 35-40 minutes, or until pork chops are cooked through and rice is tender.
