- Seasoned Fresh Pork Tenderloin
- 1 Tablespoon olive oil
- 1 onion
- 1/2 cabbage
- 1 large apple
- 1/2 cup Cider
Instructions
- Heat a skillet on medium high heat while you prepare the ingredients.
- Mince the onion and chop the cabbage. Peel, core and slice the apple. Slice the pork tenderloin into medallions about 1 1/2 inches wide. You should end up with 8-10 medallions.
- Add olive oil to the hot skillet and add the onion. Stir for 1 minutes. Then push the onion to the side of the skillet and sear the meat, browning 3-4 minutes on each side.
- Remove the pork from the skillet and set aside. Cover to keep warm.
- Add apples and cabbage to the skillet and saute for 5 minutes.
- Return the pork medallions to the skillet. Pour the cider or apple juice over the top and cook for 5 more minutes, or until the pork reaches an internal temperature of 145 F.
